Beef steaks 1/8 inch to 1/4 in thick, cook 2 to 3 minutes. Steaks 1/2 inch thick, cook 3 to 5 minutes. Season with salt and pepper. Heat a small amount of oil in skillet over medium high heat. When hot, add steaks. Do not crowd. Cook uncovered, turning once according to time for medium rare to medium.
